Something that so many guests have been waiting for is very close to returning to normal. Disney just announced that traditional character greetings are set to return to Disney World, Disneyland, Disney Cruise Line, and Aulani Resort this spring!

Walt Disney World and Disneyland Will Close for the Rest of March Due to Coronavirus Concerns
Out of an abundance of caution Disney has decided to close its theme parks in the U.S. due to Coronavirus concerns. This comes after having closed Shanghai Disney and Tokyo Disney.
Cooking the Disney Way: Pollo a las Rajas
It has been a while since I have made one of the recipes from our Disney cookbook. So, I thought it was time to crack open the cookbook again. My husband and I both looked it over and we agreed on the Pollo a las Rajas from San Angel Inn Restaurante in the Mexico pavilion in Epcot.
On our next trip we are staying at the Boardwalk Villas, so we will be within walking distance of Epcot and all the wonderful dining experiences in the World Showcase. Cooking this recipe gave us a sample of what San Angel Inn Restaurante has on their menu and we we not disappointed.
For legal reasons, I cannot actually post the recipe (it being copyrighted material and all), but I can give you a review of the recipe. If it sounds good to you then you can always look for the book the next time you are in Disney. I’m not sure if you can order it directly from Disney, but it cannot hurt to call and ask. I found a Guest Services number on disneystore.com, 1-800-328-0368. The name of the cookbook is ‘Cooking with Mickey and the Disney Chefs’ by Pam Brandon and I purchased it from the gift shop at Animal Kingdom Lodge.

Now for the recipe review. We loved it! Well, my husband and I did. Our kids are still young and sometimes it is hard to get them to try something that “looks different.” All in good time. If you like Mexican food then you will love this. It is a nice step away from the usually burritos and quesadillas. The vegetables are in a type of cream sauce, but there is a little kick to it, so it is a perfect topper for the chicken.

All of the flavors worked so well together with this recipe. So, again, if you are a fan of Mexican food chances are you will love this dish. We have decided to put San Angel Inn on the list of restaurants to try next time. I have heard good things, so we are excited to try more dishes from this restaurant.
I have tried quite a few recipes from this book and we have yet to come across a bad one. There may be some that not everyone likes, but there is always at least one person who will enjoy it. For example, for his birthday I made my husband the Coconut Curried Chicken Stew from Boma–Flavors of Africa. He loved it, but I am not that big on curry. I told him the soup was all his and I don’t think he was disappointed about that. That’s why I recommend this book. There is something for everyone. Plus, it’s fun to cook the Disney recipes and add a little Disney to your meal! Happy cooking!

Planning for the Next Trip
We are getting ready to start planning out next trip to Disney World and I have started to make a list of things that I would like to try to fit in. There is so much to do at Disney, so the list helps to keep things organized. If you read my bio you see how crazy I am with organizing for Disney…that’s why I have a spreadsheet with table service restaurants and columns for links to pictures and menus. Oh yeah, I am a little OCD when it comes to organizing and planning for Disney.
One thing that is on my list is Club Cool. In case you haven’t heard of Club Cool I will give you a little rundown. First of all, when you are in the parks have you noticed that there are no Pepsi products? You can ask for a Pepsi, but you won’t get a Pepsi. Coke has a deal with Disney and therefore Coke products are what you will find in the parks and resorts. As a result, they opened Club Cool in 2005 and offered different kinds of Cokes. These different flavors are from all over the world. So you get to taste what kind of Coke products other countries enjoy. They switch out often, but the one that remains is Beverly. I have read and heard about this particular flavor, but I don’t want to ruin it for those that don’t know about it 😉 It is located in Future World and, from pictures I have seen, it looks as though there are multiple fountain drink stations. So, you shouldn’t have to worry about lines for free drinks. Oh yeah, that’s a pretty important part of the Flavors Around the World at Club Cool…it’s free! So go in and try some drinks for free! Not bad, especially on a hot Florida day.
I’m also putting Splash Mountain on the list. I have been on this ride numerous times, but it was closed during our last trip and that sucked. I know the rides have to go down for refurb here and there, but that is my favorite ride, so I was bummed. My family went to Disney in 1992 right after it opened and we were able to ride it several times, it was so much fun! Now, when the logs float through the inside of the ride, the smells remind me of that trip 🙂 That is probably why it’s my favorite ride. So I checked the refurb list and saw that is down for a refurb this winter, so we should be safe in the fall.
Those are a few things that we are looking forward to for the next trip. I’m sure there will be more posts relating to our planning of the trip as we get closer and after we have booked the hotel. If there are things that you don’t want to miss, I highly recommend making a list. With so much to do at Disney, it helps to go with a plan!
