We had a family party recently and my daughter really wanted to make Minnie and Mickey cupcakes. I know Pinterest has lots of great suggestions, but I didn’t have time to get too fancy with the cupcakes, so I went with a simple idea.
We make Mickey and Minnie ear hats for the tops of the cupcakes. This was really a last minute decision, which is another reason why we needed something easy. The cupcakes were easy to make and easy to decorate. Plus, everyone loved them. So it was win-win!
Here is what you will need:
- Cake Mix of Your Choice (We Used Confetti Cake Mix)
- Colorful Cupcake Liners (We Used Pink)
- Pink Frosting for Minnie (We Used Strawberry Cream from Pillsbury)
- Red Frosting for Mickey (We Used Whipped Vanilla Frosting from Betty Crocker and added Red Food Coloring)
- Oreos (Original)
- Mini Oreos
- Pearlized Sprinkles
- Twizzlers Pull ‘n’ Peel (Cherry)
Instructions
Bake the cupcakes according to the instructions on the box. Once they are done, let them cool completely. If you have to make your own red icing you can do that while the cupcakes are baking. Whipped icing is easier for spreading, but if the icing you bought is not whipped you can put it in a bowl and mix it to soften it.
Once the cupcakes are cooled start icing them. We made a dozen cupcakes, so there were six cupcakes with pink icing and six with red icing. We had just enough icing for the cupcakes, because we put a generous amount on so we would be able to secure the ear hats on the cupcakes.
After you are done icing the cupcakes you can start making the ear hats. Take an Oreo and separate the two sides. Take one of the sides and break it in half. Then take one of the Mini Oreos and separate the two sides. Scrape the cream, keeping it in its circular shape, and set it to the side on a plate.
Take one of the Mini Oreo sides and put a little bit of icing on the bottom (use the side that says “Oreo”, not the smooth side) this will help to secure it to the bigger Oreo. Stick the Mini Oreo to the back of the bigger Oreo. Make sure to stick it on the smooth side, so both the Mini Oreo and the bigger Oreo will both have the “Oreo” side facing forward. Repeat this on the other side of the bigger Oreo to get your ear hat. Then place it on the cupcake, pushing down slightly so the bottom part is nicely surrounded by icing.
Once all the ear hats have been made, take the pearlized sprinkles and put some on the pink cupcakes. This gives the illusion of Minnie’s dress. After you finish with the Minnie cupcakes, take the Mini Oreo cream that you have set aside and put two on each Mickey cupcake, they are his buttons.
The final decoration step comes with the Twizzlers Pull ‘n’ Peel Candy. These are used as the bows for the Minnie cupcakes. Tie them in bows, put icing on the back, and try to stick/balance them in between the ears on the Minnie cupcakes. This last part can be a little tricky, but the end result is pretty cute.
The cupcakes were really simple to make. Using a cake mix and store bought icing helps with the ease and quickness. Both the kids and adults loved the cupcakes. It’s nice when you can make a quick dessert that still impresses your guests!
